It is crafted and fired in the Nanraku kiln in Toki City, Gifu Prefecture, which is the production centre of Mino ware. Nanraku Kiln, founded in 1897 is the leading mortar producer in Japan and still makes each and every one of them with a variety of wisdom and technology cultivated over a long history.

* It is advisable to use binchotan charcoal as it has a long burning time, cleaner burn with less ash and smoke, and is suitable for enjoying cooking indoors with good ventilation.
How to use
To use, remove the inner bowl and fill the outer ceramic bowl with some water, below the air vent level. The water acts as an insulating layer, keeping the exterior of the shichirin cool while preventing cracking, burning and scorching of wood surfaces. The water also serves to neatly contain any excess oil and ash for easy clean-up.
Place a few pieces of charcoal in the inner bowl and avoid overcrowding. Do not pack charcoal tightly but with some room between each piece. You can ignite the charcoal either inside Shichirin using a flame blow torch or away from the Shichirin and return them to the inner bowl.
The best cooking heat comes from low glowing ember flame, not fiery burning flame with sparks.
When you want to remove stains, wipe off with a wet towel, etc. It is not advised to wash Shichirin in water as it will absorb the water and get more vulnerable to cracks or breakage.
NOT suitable for Dishwasher, Microwave, Oven or Stove top.
Caution
Please burn charcoal in well ventilated areas only. All types burning charcoal will produce Carbon Monoxide. Carbon monoxide poisoning through this odourless gas is hazardous to one's health.
